Leftover Meatloaf Patty Melts
Ingredients
- Slices of leftover meatloaf, however many you have to make sandwiches
- 2 slices of cheese for each sandwich, I used american and muenster
- Thin sliced sweet onions, medium size or enough to add to the sandwiches you are making,
- Slices of your favorite bread, as many as you need
- Butter, for cooking onions and spreading on bread
- Salt and pepper to taste
Directions
- Turn burner on medium heat in a large skillet add butter on one side, add the onion slices to the butter, cook until tender, keep stirring, so not to burn.
- On other half of skillet place the meatloaf slices to heat through, flipping to heat both sides.
- Place a piece of cheese on top of one piece of bread. Repeat for as many sandwiches you are making.
- Remove meatloaf slices and place on prepared bread, top with another slice of cheese and a generous spoonful of the cooked onions, enough to cover meatloaf. Top with another slice of bread.
- Turn burner heat down to low/medium, butter top and bottom of the bread, and grill like a grilled cheese sandwich in the skillet, turn with spatula grill on both sides, to a golden brown.
- Serve with your favorite condiments and side dish. Enjoy!
