Red Beans and Rice
My Easy version of Red Beans and Rice, No Meat, gotta make something for the Vegetarians. The non-vegetarians thought this was good stuff too…
Red Beans and Rice
Ingredients
- 2 cans small red beans,15 ounces, drained and rinsed
- 1 large onion, diced
- 1 large green pepper, diced
- 1/2 cup diced celery
- 3 tablespoons butter
- 2 teaspoons garlic powder, or minced garlic
- 2 teaspoons umami mushrooms seasoning
- 1 tablespoon Cajun seasoning
- 2 paprika
- 1 bay leaf
- 16 ounces vegetable broth
- 2-4 cups hot cooked rice, whatever you think you need
- sliced green onion, for top when serving
- salt and pepper to taste
Directions
- In a medium sauce pot on medium heat add the butter, onion, green peppers, celery, saute for a few minutes.
- Add and stir in the seasonings, add the whole cans of the beans, add bay leaf.
- Let the beans come to a boil, for about 15 minutes, check and stir often, turn down heat if needed.
- Add the broth, Turn heat down to low, let simmer for about another 15 minutes.
- Spoon out about 1/2 cup of the beans into a bowl and mash. Add back into pot, this will thicken sauce a little, if you need it to be thicker. (I let mine get a little to thick, you can add more broth if needed.)
- Turn heat down to simmer, take out bay leaf, when ready to serve over hot rice. Add some sliced green onions on top and Enjoy!
