Stuffed Green Pepper Casserole

Ingredients

  • 1/2 pound ground meat, I used leftover meatloaf crumbled
  • 1/2 large green pepper diced
  • 1 can petite diced tomatoes, about 15 ounces
  • 1 can tomato sauce 8 ounces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese

Directions

  • Preheat oven to 375°.
  • In a skillet on medium heat, add olive oil and green peppers saute for a few minutes.
  • Add ground meat and brown, or crumble leftover meatloaf
  • Add the tomatoes, tomatoes sauce, and all the spices.
  • Let this simmer for about 10 minutes.
  • In a small casserole dish spread the rice evenly on bottom, pour meat mixture over rice, top with shredded cheddar cheese and bake in a 375° oven for about 20 minutes.
  • Transfer to a cooling rack or set on stove top. Let set for a few minutes before serving. Serves 2-3. Enjoy!
