Stuffed Green Pepper Casserole
Ingredients
- 1/2 pound ground meat, I used leftover meatloaf crumbled
- 1/2 large green pepper diced
- 1 can petite diced tomatoes, about 15 ounces
- 1 can tomato sauce 8 ounces
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried basil
- 1 teaspoon Italian seasoning
- 2 cups cooked rice
- 1 cup shredded cheddar cheese
Directions
- Preheat oven to 375°.
- In a skillet on medium heat, add olive oil and green peppers saute for a few minutes.
- Add ground meat and brown, or crumble leftover meatloaf
- Add the tomatoes, tomatoes sauce, and all the spices.
- Let this simmer for about 10 minutes.
- In a small casserole dish spread the rice evenly on bottom, pour meat mixture over rice, top with shredded cheddar cheese and bake in a 375° oven for about 20 minutes.
- Transfer to a cooling rack or set on stove top. Let set for a few minutes before serving. Serves 2-3. Enjoy!
