Cherry Almond Cake
Ingredients
- 3/4 cup baking mix, gluten free or regular
- 1 egg
- 1/3 cup sugar
- 1/4 cup milk
- 1/4 cup sour cream
- 1/4 cup cooking oil
- 1/2 teaspoon almond extract
- Cherry frosting, store bought or homemade
- Sliced almonds for to sprinkle on top, optional
Directions
- Preheat oven to 350°, spray a 7 or 8 inch round pan or 7 inch spring form pan with cooking spray, set aside.
- In a medium mixing bowl, add the egg, beat with a fork, mix in the sugar, cooking oil, sour cream, almond extract, beat with a fork until everything is completely blended.
- Stir in baking mix beat for about one minute. Pour batter into prepared baking pan.
- Bake in preheated oven for about 35 minutes, until toothpick poked in center comes out clean.
- Set on cooling rack, after completely cooled frost with cherry frosting and sprinkle almond slices on top, if you are using. Serve and Enjoy!
- Cherry Frosting
- 2 cups powdered sugar
- 1/3 cup shortening or butter
- 1-2 tablespoons maraschino cherry juice or 1 teaspoon cherry flavoring
- Beat with hand mixer until creamy and fluffy.
