Cherry Almond Cake

Ingredients

  • 3/4 cup baking mix, gluten free or regular
  • 1 egg
  • 1/3 cup sugar
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1/4 cup cooking oil
  • 1/2 teaspoon almond extract
  • Cherry frosting, store bought or homemade
  • Sliced almonds for to sprinkle on top, optional

Directions

  • Preheat oven to 350°, spray a 7 or 8 inch round pan or 7 inch spring form pan with cooking spray, set aside.
  • In a medium mixing bowl, add the egg, beat with a fork, mix in the sugar, cooking oil, sour cream, almond extract, beat with a fork until everything is completely blended.
  • Stir in baking mix beat for about one minute. Pour batter into prepared baking pan.
  • Bake in preheated oven for about 35 minutes, until toothpick poked in center comes out clean.
  • Set on cooling rack, after completely cooled frost with cherry frosting and sprinkle almond slices on top, if you are using. Serve and Enjoy!
  • Cherry Frosting
  • 2 cups powdered sugar
  • 1/3 cup shortening or butter
  • 1-2 tablespoons maraschino cherry juice or 1 teaspoon cherry flavoring
  • Beat with hand mixer until creamy and fluffy.
