Cajun Shrimp Zucchini Rice Bowl
Ingredients
- 16 extra large raw shrimp, peeled and deveined, patted dry
- 2 teaspoons Cajun seasoning
- 1 teaspoon paprika
- 1 tablespoon butter
- 2 cup cooked rice, keep warm
- 2 cups sauteed thin sliced zucchini, sauteed for a few minutes with 1 tablespoon olive oil, keep warm.
- salt and pepper to taste
- sliced green onions and a small chopped tomato for garnish
Ingredients
- Place Shrimp in a bowl, sprinkle Cajun seasoning and paprika over shrimp to coat, set aside.
- In a large skillet on medium heat, add butter, set shrimp in single layer in skillet, cook about two minutes on each side, more if needed, until pink all the way through.
- Serve with zucchini and rice in a bowl, garnish with green onions and tomato if you like.
- Serves 2. Enjoy!
