Cajun Shrimp Zucchini Rice Bowl

Ingredients

  • 16 extra large raw shrimp, peeled and deveined, patted dry
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon paprika
  • 1 tablespoon butter
  • 2 cup cooked rice, keep warm
  • 2 cups sauteed thin sliced zucchini, sauteed for a few minutes with 1 tablespoon olive oil, keep warm.
  • salt and pepper to taste
  • sliced green onions and a small chopped tomato for garnish

Ingredients

  • Place Shrimp in a bowl, sprinkle Cajun seasoning and paprika over shrimp to coat, set aside.
  • In a large skillet on medium heat, add butter, set shrimp in single layer in skillet, cook about two minutes on each side, more if needed, until pink all the way through.
  • Serve with zucchini and rice in a bowl, garnish with green onions and tomato if you like.
  • Serves 2. Enjoy!
