Small Orange Cake

Ingredients

  • 1/2 cup regular or gluten free baking mix
  • 1 egg
  • 1/4 cup sugar
  • 1/4 cup orange juice
  • 2 tablespoons cooking oil
  • a few drops orange extract

Directions

  • Preheat oven to 350°, spray a 6 inch round cake pan with cooking spray, set aside.
  • In a medium mixing bowl add egg, beat with a fork, add the sugar, cooking oil, orange extract, and orange juice, beat for a minute until blended.
  • Add the baking mix and beat until smooth and blended.
  • Pour batter into cake pan, Bake in preheated oven for about 20-25 minutes, or until a toothpick entered in center comes out clean.
  • Set on cooling rack, cool completely. Drizzle with your favorite glaze with a few drops of orange extract added. Serve and Enjoy!
