Chocolate Cake with Cream Cheese Pudding Frosting

Ingredients

  • 1/3 cup regular or gluten free all purpose flour
  • 3 tablespoons baking cocoa
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3 tablespoons sugar
  • 3 tablespoons light brown sugar
  • 1 egg
  • 1/4 cup yogurt
  • 2 tablespoons cooking oil
  • 3 tablespoons hot water

Directions

  • Preheat oven to 350°, Spray 6 inch round cake with cooking spray, set aside.
  • In a medium size mixing bowl add egg, yogurt, cooking oil, beat together.
  • Add both sugars, beat together until blended.
  • Sift the flour, baking cocoa, baking powder and baking soda together into the wet mixture beat until completely mix.
  • Mix in the hot water until blended, pour batter into prepared bake pan.
  • Bake in preheated oven to about 25 minutes, until toothpick comes out clean.
  • Set on cooling rack, after completely cooled frost with cream cheese pudding frosting.
  • Refrigerate until frosting is cold and set, ready to serve. Enjoy!

Cream Cheese Pudding Frosting

  • 2 chocolate pudding cups, 4 ounces each
  • 4 ounces cream cheese, half block, room temperature
  • Beat the cream cheese on high with hand mixer until smooth add pudding beat until blended smooth.
