Chocolate Cake with Cream Cheese Pudding Frosting
Ingredients
- 1/3 cup regular or gluten free all purpose flour
- 3 tablespoons baking cocoa
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 3 tablespoons sugar
- 3 tablespoons light brown sugar
- 1 egg
- 1/4 cup yogurt
- 2 tablespoons cooking oil
- 3 tablespoons hot water
Directions
- Preheat oven to 350°, Spray 6 inch round cake with cooking spray, set aside.
- In a medium size mixing bowl add egg, yogurt, cooking oil, beat together.
- Add both sugars, beat together until blended.
- Sift the flour, baking cocoa, baking powder and baking soda together into the wet mixture beat until completely mix.
- Mix in the hot water until blended, pour batter into prepared bake pan.
- Bake in preheated oven to about 25 minutes, until toothpick comes out clean.
- Set on cooling rack, after completely cooled frost with cream cheese pudding frosting.
- Refrigerate until frosting is cold and set, ready to serve. Enjoy!
Cream Cheese Pudding Frosting
- 2 chocolate pudding cups, 4 ounces each
- 4 ounces cream cheese, half block, room temperature
- Beat the cream cheese on high with hand mixer until smooth add pudding beat until blended smooth.
