Slow Cooker Meatloaf
Ingredients
- 1 pound Ground Chuck
- 1 pound Ground Pork
- 1/2 cup quick oats
- 2 eggs
- 4 tablespoons BBQ sauce
- 1/2 cup chopped onions
- 1 teaspoons garlic powder
- 1 teaspoon your favorite seasoning blend, I used umami mushroom
- salt and pepper to taste
- Extra BBQ Sauce to spread on top of meatloaf
Directions
- Spray an oval slow cooker with cooking spray
- In a large mixing bowl add all the ingredients (except the extra BBQ Sauce) and mix until everything is evenly incorporated.
- Form an oval with the meatloaf mix, pack with hands, set in slow cooker and shape oval so it doesn’t touch sides. Spread and cover top with a couple of extra tablespoons BBQ Sauce.
- Plug in slow cooker set on high, cook for 3 hours, turn down slow cooker to low and cook for 1 more hour.
- Unplug slow cooker, let sit 15 minutes, carefully lift out meatloaf with a spatula and fork, set on a serving plate.
- While meatloaf is hot spread more BBQ Sauce on top if you like, cut into slices and serve with you favorite side dishes. Enjoy!
