Triple Chocolate Sour Cream Mini Loaves

Ingredients

  • 1/3 cup regular or gluten free baking mix
  • 1/3 cup baking cocoa
  • 1 egg
  • 1/4 cup sugar
  • 1/4 cup light brown sugar
  • 1/4 cooking oil
  • 1/4 cup sour cream
  • 1/4 cup mini semi sweet chocolate chips
  • 2 mini loaf pans 3×6

Directions

  • Preheat oven to 350°, spray mini loaf pans with cooking spray, set aside.
  • In a medium mixing bowl add the egg and slightly beat with a fork.
  • Add the sugars, cooking oil, sour cream and beat everything together by hand or mixer.
  • Sift the baking mix and baking cocoa together, add to liquid ingredients, beat in with mixer or by hand.
  • Add the hot water and completely mix in the batter.
  • Pour batter into the prepared mini loaf pans.
  • Bake for about 30 minutes, cool and remove from pans, if you like.
  • Drizzle or frost with chocolate or glaze, optional. Slice and Enjoy!
