Banana Coconut Pecan Cake
INGREDIENTS
- 3/4 cup gluten free or regular flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 small mashed banana
- 1 egg
- 1/3 cup light brown sugar
- 3 tablespoons cooking oil
- 1/4 cup milk
- 1/4 cup chopped pecans
- 1/4 cup shredded coconut
DIRECTIONS
- Preheat oven to 350°, spray a 6 inch baking pan with cooking spray, set aside.
- Mix together the mashed banana and egg, beat with a fork.
- Add the light brown sugar, cooking oil, and milk, mix until blended.
- Sift the flour, baking soda, baking powder, and cinnamon, over the mixing bowl.
- Beat together all ingredients until completely blended.
- Stir in the coconut and pecans, pour batter in to prepared baking pan.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick entered in center comes out clean.
- Set on a cooling rack, when cooled transfer to a serving dish if you like. Frost with your favorite frosting or glaze, sprinkle with extra coconut and or chopped pecans if you like.
