Banana Coconut Pecan Cake

INGREDIENTS

  • 3/4 cup gluten free or regular flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 small mashed banana
  • 1 egg
  • 1/3 cup light brown sugar
  • 3 tablespoons cooking oil
  • 1/4 cup milk
  • 1/4 cup chopped pecans
  • 1/4 cup shredded coconut

DIRECTIONS

  • Preheat oven to 350°, spray a 6 inch baking pan with cooking spray, set aside.
  • Mix together the mashed banana and egg, beat with a fork.
  • Add the light brown sugar, cooking oil, and milk, mix until blended.
  • Sift the flour, baking soda, baking powder, and cinnamon, over the mixing bowl.
  • Beat together all ingredients until completely blended.
  • Stir in the coconut and pecans, pour batter in to prepared baking pan.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick entered in center comes out clean.
  • Set on a cooling rack, when cooled transfer to a serving dish if you like. Frost with your favorite frosting or glaze, sprinkle with extra coconut and or chopped pecans if you like.
