Brown Rice and Mushroom Sloppy Joes

INGREDIENTS

  • 2 cups cooked brown rice
  • 2 cups chopped brown mushrooms
  • 2 tablespoons olive oil
  • 1/2 cup diced onions
  • 1/2 cup diced green or red bell peppers, or mix
  • 8 ounces tomato sauce
  • 1/3 cup ketchup
  • 3 tablespoons bbq sauce
  • 2 teaspoons each: chili powder, smoked paprika, onion powder
  • 1 teaspoon each: garlic powder, oregano
  • salt and pepper to taste

DIRECTIONS

  • Add olive oil to large skillet, turn heat on medium.
  • Add the peppers, onions, and mushrooms, stir and cook a few minutes.
  • Add tomato sauce, ketchup, bbq sauce, and all the seasonings, keep stirring, turn heat to low.
  • Fold in the cooked brown rice, until everything is completely combined, allow to simmer for a few minutes, stir occasionally. Mixture should be the consistency of regular sloppy joes, not to wet.
  • Serve on your favorite buns, rolls, or bread. Turn heat off. Enjoy!
