Happy Cinco de Mayo Chicken Quesadillas
INGREDIENTS
- 1/2 pound cooked diced chicken
- 1/2 bag frozen peppers and onions, about 6 ounces
- 2 teaspoons chili lime seasoning, more if you like
- salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup shredded cheddar cheese
- 8 small to medium tortillas shells, flour or corn
- 1 tablespoon olive oil
DIRECTIONS
- Add oil to a medium skillet turn heat to medium, add the cooked chicken and peppers and onions, sprinkle with chili lime seasoning, add salt and pepper to taste. Stir and fry until vegetables are tender. Turn heat to low.
- In a small skillet add oil, heat on medium/low, set a tortilla in skillet, add a couple spoons of chicken mixture spread evenly over tortilla, top with a couple spoons of the shredded cheese. Set another tortilla on top, next with a spatula flip to other side to fry and crisp the other side.
- Continue with remaining ingredients, should make about 4 quesadillas. Add more oil if needed. Enjoy!
