Spinach and Meatball Mini Pizzas

INGREDIENTS

  • 1/2 cup shredded mozzarella
  • 1 egg
  • 2 tablespoons gluten free flour or almond flour
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon onion powder
  • 3-4 tablespoons spaghetti sauce,
  • 2 meatballs
  • warm sauce and meatballs a little in microwave
  • 2 handfuls fresh spinach, sauteed in a skillet with a little olive oil, until wilted
  • shredded mozzarella cheese for top
  • garlic and herb salt free seasoning, for top

DIRECTIONS

  • Plug in and heat the mini waffle maker.
  • In a medium mixing bowl beat egg with a fork, add mozzarella cheese, Italian seasoning, onion powder, and flour.
  • Spoon half of the batter into heated mini waffle maker, cook for about 4 minutes, until golden brown. Repeat again. Makes 2, set aside.
  • Preheat toaster oven to broil.
  • Place each chaffle/waffle on a plate, spread sauce on top then top with spinach, add a meatball on each one, sliced bottom of meatballs a little to make flat, in case your afraid your meatball will roll away. Ha!
  • Sprinkle some shredded mozzarella cheese on top, and garlic seasoning blend. Place in toaster oven on rack for about 3 minutes or more if needed to melt cheese. Watch closely so not to burn.
  • Transfer to plates, turn off toaster oven, Serve and Enjoy!
