Diced Hash Brown Potato Salad
Small Batch Potato Salad prepared with frozen southern style Hash Browns, a little sweet relish, eggs, and celery, etc… I found different variations of this recipe, here is my version, what worked for me…
Hash Brown Diced Potato Salad
INGREDIENTS
- 2 cups frozen diced potatoes, (ore Ida southern style)
- 1/4 cup mayonnaise
- 2 teaspoons yellow mustard
- 2 tablespoon sweet relish
- 1 stalk celery sliced
- 1 teaspoon celery seed
- 2 eggs diced
- salt and pepper to taste
- In a small pot add the diced potatoes, cover with water, bring to a boil, boil for about 5 minutes. Test with a fork or toothpick, to see if potatoes are cooked, but not mushy.
- Take off heat and drain, Do Not Rinse, place paper towels on a large plate and spread potatoes evenly on the plate to cool.
- In a medium mixing bowl add all the ingredients, except potatoes, mix everything together to blend.
- Add potatoes, fold in and mix with a rubber spatula, until everything is evenly blended together.
- Refrigerate until ready to serve cold. Garnish with fresh dill, green onions, or parsley, if you like. Serves 2. Enjoy!
