Peanut Butter and Jelly Banana Loaf
INGREDIENTS
- 1 cup gluten free or regular all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 egg
- 1 small/medium mashed ripe banana
- 1/4 cup peanut butter
- 1/4 cup milk
- 2 tablespoons light brown sugar
- 2 tablespoons cooking oil
- 1/4 cup jam, your favorite
DIRECTIONS
- Preheat oven to 350°, spray a loaf pan with cooking spray, set aside.
- In a mixing bowl mash banana, add egg and beat together with a fork, next add in the peanut butter, mixed until everything is blended.
- Stir in the milk, and cooking oil. Sift the flour, baking powder and baking soda over the bowl of the wet ingredients. Stir in mix batter completely together.
- Pour half of the batter in prepared loaf pan, add few plops of jam across the center, (save a small amount of jam for top), swirl in jam with a knife, lightly.
- Pour the remaining batter on top of jam swirls, next swirl the remaining jam on top.
- Bake in preheated oven for about 35-40 minutes. Test with a toothpick entered in loaf (away from jam) for doneness. Loaf will be dense and moist and really good!
- Set on cooling rack, serve warm or cold. With a cold glass of milk! Enjoy!
