Pepperoni Mushroom Cheese Omelet

INGREDIENTS

  • 2 eggs
  • 8 slices pepperoni
  • 2 tablespoons shredded mozzarella cheese, more or less
  • 1 or 2 mushrooms sliced
  • Pinch Italian seasoning
  • Pinch onion powder
  • Pat of butter
  • salt and pepper to taste

DIRECTIONS

  • Turn burner on medium, in a small skillet, about 8 inch, add butter to melt, after butter is melted add the mushroom slices to saute a couple of minutes.
  • In a small bowl beat eggs with a fork, add onion powder and italian seasoning, pour evenly over mushrooms, turn heat down to low.
  • While eggs cook, roll and tilt skillet to disperse eggs around edges to cook until your desired doneness of eggs.
  • Add the cheese evenly on top of eggs, place the pepperoni slices on one half of the omelet, fold omelet in half, with a spatula, allow to cook a minute to melt cheese and heat pepperoni.
  • Flip over omelet to cook more, if needed, your preference. Top with extra cheese. Turn off burner, transfer to a plate. Enjoy!
