Easy Apricot Chicken
INGREDIENTS
- 1/2 pound boneless skinless chicken breast, cut in to cubes
- 2 teaspoons minced garlic, (from jar)
- 1/3 cup apricot preserves
- 2 tablespoons low sodium soy sauce
- 1 tablespoon BBQ sauce
- 1 teaspoon paprika
- 1 tablespoon apple cider vinegar
- 1/3 cup chicken broth
- pinch red pepper flakes, for a little heat (optional)
- 2 green onions for topping, when serving
- 2-3 cup cooked rice, kept warm
DIRECTIONS
- In a small bowl add the apricot preserves, soy sauce, bbq sauce, apple cider vinegar, and chicken broth, mix to combine all the ingredients, set aside.
- Turn burner on medium add olive oil to a medium size skillet, next add chicken and stir fry chicken about 5 minutes, brown all sides of the chicken.
- Add garlic, stir and turn burner down to low/medium.
- Pour in sauce, stir and allow to cook until chicken is done, and sauce will start to thicken, about 5 minutes or so. Sprinkle in pepper flakes if you like. Turn off burner.
- Serve over hot rice, top with sliced green onions. Serves about 2. Enjoy!
