Cranberry Chocolate Chip Banana Muffins
INGREDIENTS
- 2/3 cup gluten free or regular all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 ripe mashed small banana
- 1 egg
- 3 tablespoons sugar
- 2 tablespoons cooking oil
- 2 tablespoons milk
- 1/2 teaspoon vanilla flavor
- 3 tablespoons mini chocolate chips
- 3 tablespoons dried cranberries, craisins
DIRECTIONS
- Preheat oven to 350°, spray a regular cupcake tin with cooking spray, set aside.
- In a mixing bowl mash banana, add egg and beat with a fork.
- Next add the cooking oil, milk, sugar, and vanilla, mix completely.
- Sift together the flour, baking powder, and baking soda over the wet ingredients, mix in until everything is blended together.
- Add the chocolate chips and dried cranberries, stir in.
- Pour batter in prepared cupcake tin, makes about 4 or 5 muffins.
- Bake in preheated oven for about 20-22 minutes or until toothpick entered in center comes out clean. Set on cooling rack, allow to cool, take muffins out of tin. Serve and Enjoy!
