Double Chocolate Banana Cake

INGREDIENTS

  • 3/4 cup gluten free or regular all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 3 tablespoons baking cocoa
  • 1 small ripe banana, mashed
  • 1 egg
  • 1/3 cup light brown sugar
  • 1/3 cup milk
  • 3 tablespoons cooking oil
  • 1/4 cup mini chocolate chips

DIRECTIONS
  • Preheat oven to 350°, spray a 6 inch round baking pan with cooking spray, set aside.
  • In a medium mixing bowl mash banana, add the egg and beat together.
  • Add the light brown sugar, oil, milk and mix.
  • Next sift the flour, baking cocoa, baking powder, baking soda, and cinnamon over the bowl of wet ingredients.
  • Beat for about a minute until everything is blended together, stir in chocolate chips.
  • Bake in preheated oven for about 30-35 minutes, or until a toothpick entered in center comes out clean.
  • Set on cooling rack, after cooled transfer to a serving plate, if you like, and frost with your favorite frosting. Serve and Enjoy!
