Sausage Mushroom Broccoli Pasta

INGREDIENTS

  • 1/2 pound ground sausage, I used mild breakfast sausage
  • 8 ounces sliced fresh mushrooms
  • 2 tablespoons butter
  • 12 ounce bag frozen broccoli, steamed
  • 1/2 cup broth, chicken or beef
  • 1/2 cup whipped cream cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon each of garlic and onion powder
  • salt and pepper to taste
  • 6 ounces regular or gluten free penne pasta, cooked to package directions, set aside
  • extra parmesan cheese when serving

DIRECTIONS

  • Turn heat on stove to medium, in a medium skillet add the ground sausage and break up with fork or wooden spoon to smaller pieces cook for about 5 minutes until no pink showing.
  • Drain fat off the cooked sausage if needed, move aside, off burner.
  • In a large skillet add butter and sliced mushrooms, cook for a few minutes on medium heat, next add the cooked sausage, spices, and the broth, turn heat to low.
  • Next stir in the whipped cream cheese until blended completely with all the ingredients.
  • Stir in the grated parmesan cheese, add the steamed broccoli, and fold in the cooked penne pasta, until sauce has covered everything evenly.
  • Turn off burner and serve hot and with extra cheese grated on top. Serves about 3. Enjoy!
