Ground Chicken Diced Tomatoes over Pasta
INGREDIENTS
- 1 pound ground chicken
- 3 tablespoons olive oil
- 2 cans petite diced tomatoes, 14 ounces each
- 1 can tomato sauce, 8 ounce
- 2 teaspoons of each; garlic powder and onion powder
- 1 teaspoon of each; dried basil, Italian seasoning, and dried oregano
- salt and pepper to taste
- 1 cup frozen peas
- about 12 ounces of your favorite pasta shape (spaghetti, rigatoni, rotini, penne) cooked to package directions
- Parmesan or Romano cheese for top, when serving
DIRECTIONS
- In a large skillet add the olive oil, turn heat on medium, add ground chicken, break up to smaller pieces and stir to brown on all sides.
- Sprinkle all the herbs and spices evenly over the chicken, stir to completely incorporate.
- Add the diced tomatoes and tomato sauce, stir to mix everything together.
- Allow to cook for about 10 minutes, stirring often. Reduce heat to low and simmer for another 10 minutes, this should allow some of the liquid to evaporate. This will allow it to thicken.
- Add the peas last and stir in, cook for about 5 minutes, add pasta stirring to mix everything evenly, turn off heat and serve. Top with grated cheese. Serves about 4. Enjoy!
