Double Chocolate Pecan Cake
INGREDIENTS
- 1/2 cup regular or gluten free all purpose flour
- 1/4 cup baking cocoa
- 1 egg
- 1/4 cup cooking oil
- 1/2 cup light brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla flavor
- 1/4 hot strong coffee or hot water
DIRECTIONS
- Preheat oven to 350°, spray a 6 inch square baking pan with cooking spray, set aside.
- In a medium mixing bowl add egg and beat with fork, next add the light brown sugar, cooking oil, and vanilla mix.
- Next sift together the flour, baking cocoa, and baking soda, over the mixing bowl of wet ingredients, stir everything together until completely blended in.
- Add the hot coffee or water and mix. Fold in the chocolate chips and pecans.
- Pour batter in to the prepared baking pan, Bake in preheated oven for 25-30 minutes or until a toothpick entered in center comes out clean.
- Set on cooling rack or board to cool completely before frosting. Take out of baking pan and set on a serving dish, if you like. Frost with your favorite frosting and serve. Enjoy!
