Broccoli Chicken Rice Casserole
INGREDIENTS
- 2 cups shredded or cut up cooked rotisserie chicken
- 2 cups cooked rice
- 1 can cream of chicken or mushroom soup, natural, heart healthy or lower sodium
- 2 teaspoons salt free original seasoning blend, or your favorite
- 1 cup shredded sharp cheddar cheese
- 3 tablespoons butter, room temperature
- 12 ounce bag frozen broccoli florets, steamed
- salt and pepper to taste
DIRECTIONS
- Preheat oven to 350°, spray a medium casserole dish with cooking spray, set aside.
- In the casserole dish add the rice, cream soup, 3/4 cup shredded cheese, butter, seasoning, salt and pepper to taste.
- Fold in chicken, mix everything to blend completely.
- Spread mixture evenly in casserole dish, top with broccoli, press in slightly, add the remaining 1/4 cup of shredded cheese last.
- Bake in the preheated oven for about 25 minutes, allow to sit for 10 minutes before serving. Serves about 3 or 4. Enjoy!
