Broccoli Chicken Rice Casserole

INGREDIENTS

  • 2 cups shredded or cut up cooked rotisserie chicken
  • 2 cups cooked rice
  • 1 can cream of chicken or mushroom soup, natural, heart healthy or lower sodium
  • 2 teaspoons salt free original seasoning blend, or your favorite
  • 1 cup shredded sharp cheddar cheese
  • 3 tablespoons butter, room temperature
  • 12 ounce bag frozen broccoli florets, steamed
  • salt and pepper to taste

DIRECTIONS

  • Preheat oven to 350°, spray a medium casserole dish with cooking spray, set aside.
  • In the casserole dish add the rice, cream soup, 3/4 cup shredded cheese, butter, seasoning, salt and pepper to taste.
  • Fold in chicken, mix everything to blend completely.
  • Spread mixture evenly in casserole dish, top with broccoli, press in slightly, add the remaining 1/4 cup of shredded cheese last.
  • Bake in the preheated oven for about 25 minutes, allow to sit for 10 minutes before serving. Serves about 3 or 4. Enjoy!
