Large Coconut Pecan Cookie
INGREDIENTS
- 1/2 cup regular or gluten free all purpose flour
- 1 egg
- 4 tablespoons butter room temperature
- 1/4 cup light brown sugar
- 1/4 cup sugar
- 1/4 cup chopped pecans
- 1/4 cup shredded coconut
DIRECTIONS
- Preheat oven to 350°, spray a 6 inch round baking pan with cooking spray, set aside.
- in a medium mixing bowl cream together the sugars and butter.
- Next add egg and mix, then add flour, mix until all is blended together.
- Stir in the coconut and pecans. Spread batter into the the prepared baking pan, Bake in preheated oven for about 15-17 minutes, until golden color.
- Transfer to cooling rack to cool, cut into 8 wedges if you like. Enjoy!
