Large Coconut Pecan Cookie

INGREDIENTS

  • 1/2 cup regular or gluten free all purpose flour
  • 1 egg
  • 4 tablespoons butter room temperature
  • 1/4 cup light brown sugar
  • 1/4 cup sugar
  • 1/4 cup chopped pecans
  • 1/4 cup shredded coconut

DIRECTIONS

  • Preheat oven to 350°, spray a 6 inch round baking pan with cooking spray, set aside.
  • in a medium mixing bowl cream together the sugars and butter.
  • Next add egg and mix, then add flour, mix until all is blended together.
  • Stir in the coconut and pecans. Spread batter into the the prepared baking pan, Bake in preheated oven for about 15-17 minutes, until golden color.
  • Transfer to cooling rack to cool, cut into 8 wedges if you like. Enjoy!
