Peppers and Onion Omelet
INGREDIENTS
- 2 eggs
- 1/4 cup peppers and onion blend, frozen or fresh
- 1/4 cup shredded mozzarella cheese
- pinch of Italian seasoning
- salt and pepper to taste
- 1 tablespoon butter
DIRECTIONS
- Beat the eggs together with a fork in a small bowl, sprinkle a little Italian seasoning, mix.
- Turn a skillet on medium heat and add butter.
- When butter is melted, add pepper and onions to the skillet, stir fry for a couple minutes, pour eggs over peppers and onions, turn burner down to low.
- After a minute turn over, like a pancake to cook other side, cook a few seconds, turn over again, sprinkle cheese over one half of egg.
- Take a spatula and fold omelet in half, allow cook about 30 seconds too melt cheese.
- Transfer to a plate, Enjoy!
