Peppers and Onion Omelet

INGREDIENTS

  • 2 eggs
  • 1/4 cup peppers and onion blend, frozen or fresh
  • 1/4 cup shredded mozzarella cheese
  • pinch of Italian seasoning
  • salt and pepper to taste
  • 1 tablespoon butter

DIRECTIONS

  • Beat the eggs together with a fork in a small bowl, sprinkle a little Italian seasoning, mix.
  • Turn a skillet on medium heat and add butter.
  • When butter is melted, add pepper and onions to the skillet, stir fry for a couple minutes, pour eggs over peppers and onions, turn burner down to low.
  • After a minute turn over, like a pancake to cook other side, cook a few seconds, turn over again, sprinkle cheese over one half of egg.
  • Take a spatula and fold omelet in half, allow cook about 30 seconds too melt cheese.
  • Transfer to a plate, Enjoy!
