Blackberry Buckle Cake
Ingredients
- 1 cup gluten free or regular baking mix
- 1 egg
- 2/3 cup milk
- 1/3 cup sugar
- 4 tablespoons butter, melted
- 1 & 1/2 cups fresh or frozen Blackberries
- 2 tablespoons sugar
- * Make sure to use gluten free ingredients to make it gluten free!
Directions
- Bake in a 350° preheated oven for 40 minutes.
- Spray a round or square baking dish with cooking spray.
- In a medium mixing bowl beat eggs with a fork, add milk, baking mix, and melted butter.
- Beat all together with a fork for about a minute, until all mixed.
- Pour batter into baking dish, evenly top with blackberries, sprinkle about 2 tablespoons of sugar over top. Bake in oven at 350° for about 40 minutes.
- Set on cooling rack to cool. Serve with whip cream or ice cream, warm or cooled. Enjoy!
