Blackberry Buckle Cake

Ingredients

  • 1 cup gluten free or regular baking mix
  • 1 egg
  • 2/3 cup milk
  • 1/3 cup sugar
  • 4 tablespoons butter, melted
  • 1 & 1/2 cups fresh or frozen Blackberries
  • 2 tablespoons sugar
  • * Make sure to use gluten free ingredients to make it gluten free!

Directions

  • Bake in a 350° preheated oven for 40 minutes.
  • Spray a round or square baking dish with cooking spray.
  • In a medium mixing bowl beat eggs with a fork, add milk, baking mix, and melted butter.
  • Beat all together with a fork for about a minute, until all mixed.
  • Pour batter into baking dish, evenly top with blackberries, sprinkle about 2 tablespoons of sugar over top. Bake in oven at 350° for about 40 minutes.
  • Set on cooling rack to cool. Serve with whip cream or ice cream, warm or cooled. Enjoy!
