Lime and Coconut Cake
Ingredients
- 1 & 1/4 cup baking mix, regular or gluten free
- 2 eggs
- 1/4 cup sour cream
- 1/3 cup milk
- 1/2 cup sugar
- 1/4 cup cooking oil
- 1 small lime
- 2 teaspoons lime zest
- 2 tablespoons lime juice
- 1/3 cup shredded coconut
- 3 drops of green food coloring, optional
Directions
- Preheat oven to 350°, spray a 7 inch round spring form pan with cooking spray, set aside.
- In a medium mixing bowl, beat eggs with a fork, add sugar, cooking oil, sour cream, milk, lime zest, and lime juice, beat together for about a minute.
- Stir in baking mix and coconut beat for about two minutes until completely blended, stir in food coloring if you are using.
- Pour batter in to the prepared baking pan, set pan on a cookie sheet, Bake for about 50 minutes, until toothpick inserted comes out clean.
- Set on cooling rack, after cooled undo springform, transfer to a serving dish to glaze.
Glaze
- 1&1/4 cup powdered sugar
- 2 tablespoon lime juice
- Mix together, stir to get out all the lumps, spread evenly over cake.
- Garnish with sliced limes and sprinkle wth coconut.
