Lime and Coconut Cake

Ingredients

  • 1 & 1/4 cup baking mix, regular or gluten free
  • 2 eggs
  • 1/4 cup sour cream
  • 1/3 cup milk
  • 1/2 cup sugar
  • 1/4 cup cooking oil
  • 1 small lime
  • 2 teaspoons lime zest
  • 2 tablespoons lime juice
  • 1/3 cup shredded coconut
  • 3 drops of green food coloring, optional

Directions

  • Preheat oven to 350°, spray a 7 inch round spring form pan with cooking spray, set aside.
  • In a medium mixing bowl, beat eggs with a fork, add sugar, cooking oil, sour cream, milk, lime zest, and lime juice, beat together for about a minute.
  • Stir in baking mix and coconut beat for about two minutes until completely blended, stir in food coloring if you are using.
  • Pour batter in to the prepared baking pan, set pan on a cookie sheet, Bake for about 50 minutes, until toothpick inserted comes out clean.
  • Set on cooling rack, after cooled undo springform, transfer to a serving dish to glaze.

Glaze

  • 1&1/4 cup powdered sugar
  • 2 tablespoon lime juice
  • Mix together, stir to get out all the lumps, spread evenly over cake.
  • Garnish with sliced limes and sprinkle wth coconut.
