Skillet Apple Cranberry Cake

Ingredients

  • 1 small/medium apple peeled cored and sliced thin
  • 2 tablespoons butter
  • 2 tablespoons light brown sugar
  • 1/2 teaspoon cinnamon
  • 1/3 cup baking mix, regular or gluten free
  • 1 egg
  • 3 tablespoons sugar
  • 3 tablespoons cooking oil
  • 3 tablespoons milk
  • 1/2 teaspoon vanilla
  • 2 tablespoons craisins

Directions

  • Preheat oven to 350°, meanwhile turn burner on medium add to iron skillet butter and apple slices, fry for about 10 minutes.
  • Turn off burner and add the light brown sugar and cinnamon, stir to dissolve light brown sugar.
  • In a medium mixing bowl add the egg, sugar, cooking oil, milk, and vanilla beat with a fork.
  • Add the cranberries and baking mix blend in, beat with fork about 1 minute.
  • Pour batter over apples in skillet, use a pot holder and set skillet on a cookie sheet.
  • Bake for about 20 minutes, remove from oven and set on cooling rack, let cool about 5 minutes.
  • Turn over skillet on to a plate, should come out pretty easy, apple side up. Garnish with extra craisins on top, if you like. Serve warm or cooled. Enjoy!
