Leftover Prime Rib makes for a Good Soup with added Carrots, Potatoes, and I had some leftover Greens I threw in the Slow Cooker too…
Prime Rib Leftovers Soup
Ingredients
- Leftover pieces of prime rib or any steak
- 1 quart carton beef or vegetable broth
- 4 small to medium potatoes peeled and cut into large pieces
- 4 large carrots cut into large pieces
- 1 large onion cut up
- 1 cup greens, kale or spinach, more or less
- salt and pepper to taste
- This soup is pot luck use what you have in fridge
Directions
- Put everything into a large slow cooker set on high.
- Cook for about 4-5 hours, until vegetables are tender.
- Serve with your favorite crackers or bread. Enjoy!
