Chocolate Mint Frosted Cake
Cake Ingredients
- 1 cup gluten free or regular baking mix
- 1/2 cup baking cocoa
- 1 egg
- 1/3 cup cooking oil
- 3/4 cup sugar
- 1/2 cup milk
- 1/2 cup hot water
- 1/2 teaspoon mint or peppermint extract (optional)
Directions
- Preheat oven to 350°, spray 8 inch round baking pan or dish with cooking spray, set aside.
- In a medium mixing bowl add egg and slightly beat with a fork.
- Add in the sugar, cooking oil, mint extract, and milk mix together.
- Stir in the hot water, blend together.
- Add the baking mix and baking cocoa, beat everything together completely.
- Pour batter in to the sprayed baking dish, Bake in preheated 350° oven for about 25-30 minutes, until toothpick or knife inserted in middle comes out clean.
- Set came on cooling rack, when completely cooled frost with mint frosting and sprinkle Andes chopped mints on top. Cut, Serve, and Enjoy!
Frosting
- 2 cups powdered sugar
- 1/2 cup shortening or butter (or use half shortening and half butter)
- 2 tablespoons milk
- 1 teaspoon mint or peppermint extract
- Green food coloring, a few drops
- Beat everything together with hand mixer until fluffy.
