Chocolate Mint Frosted Cake

Cake Ingredients

  • 1 cup gluten free or regular baking mix
  • 1/2 cup baking cocoa
  • 1 egg
  • 1/3 cup cooking oil
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/2 cup hot water
  • 1/2 teaspoon mint or peppermint extract (optional)

Directions

  • Preheat oven to 350°, spray 8 inch round baking pan or dish with cooking spray, set aside.
  • In a medium mixing bowl add egg and slightly beat with a fork.
  • Add in the sugar, cooking oil, mint extract, and milk mix together.
  • Stir in the hot water, blend together.
  • Add the baking mix and baking cocoa, beat everything together completely.
  • Pour batter in to the sprayed baking dish, Bake in preheated 350° oven for about 25-30 minutes, until toothpick or knife inserted in middle comes out clean.
  • Set came on cooling rack, when completely cooled frost with mint frosting and sprinkle Andes chopped mints on top. Cut, Serve, and Enjoy!

Frosting

  • 2 cups powdered sugar
  • 1/2 cup shortening or butter (or use half shortening and half butter)
  • 2 tablespoons milk
  • 1 teaspoon mint or peppermint extract
  • Green food coloring, a few drops
  • Beat everything together with hand mixer until fluffy.
