 A little different version of Shepherd’s Pie, made with Lean Ground Chicken and an added layer of French Style Green Beans…

Shepherds Chicken Pie

Ingredients

  • 1 pound lean ground chicken
  • 2 cups chicken stock
  • 2 cups stiff regular or instant mashed potatoes
  • 1 cup frozen mixed vegetables
  • 2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1 can french style green beans, drained, about 15 ounce can
  • 1 tablespoon butter
  • 3 tablespoons corn starch
  • 4 tablespoons water
  • Salt and pepper to taste


Directions

  • Preheat on to 375°, spray an 8 inch round or square baking dish with cooking spray, set aside.
  • Brown ground chicken in a large skillet, add the chicken stock, vegetables, paprika, and onion powder.
  • Cook on medium for about 10 minutes. While waiting 10 minutes add butter to another (medium) skillet, add drained green beans and saute on medium until moisture is gone from the green beans, set aside.
  • Mix together the cornstarch and water, stir in to chicken skillet and mix. When thickened turn off heat.
  • Spread the meat mixture in th baking dish, then add the green beans evenly on top of meat mixture. Finally evenly spread the mashed potatoes on top of green beans. Sprinkle with paprika, parsley, or green onions.
  • Bake in oven for about 30 minutes, set on cutting board or cooling rack, let rest for a few minutes before cutting. Serve and Enjoy!
